Description
Soft, fluffy Veggie-Loaded Chocolate Muffins packed with carrots and spinach, naturally sweetened with banana and maple syrup for a wholesome breakfast or snack.
Ingredients
- 2 large eggs
- 1 cup mashed overripe banana, or 1 cup unsweetened applesauce
- 1 cup grated carrots
- 1 cup loosely packed spinach or kale
- 1/4 cup melted coconut oil or avocado oil
- 1/4 cup maple syrup or honey
- 1 teaspoon vanilla extract
- 2 teaspoons apple cider vinegar
- 1 cup white whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 cup cocoa powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 cup chocolate chips
Instructions
- Preheat oven to 350°F and line a 12-cup muffin tin with liners.
- Blend eggs, banana or applesauce, carrots, spinach or kale, oil, maple syrup or honey, vanilla extract, and apple cider vinegar until smooth.
- Add flour, baking soda, baking powder, cocoa powder, cinnamon, and salt. Blend just until combined.
- Fold in chocolate chips.
- Divide batter evenly among the prepared muffin cups.
- Top with extra chocolate chips if desired.
- Bake for 20 to 22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes, then transfer muffins to a wire rack.
Notes
- Use dairy-free chocolate chips for dairy-free muffins.
- Replace white whole wheat flour with a 1:1 gluten-free flour blend if needed.
- If using a standard blender, blend the wet ingredients and vegetables first, then stir in the dry ingredients by hand.
- Bake until the muffin centers reach 200°F for the best texture.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- Freeze muffins for up to 1 month.
