Description

Easy to prepare Small Batch Vanilla Peach Jam made with fresh peaches, sugar, and vanilla extract. This refrigerator-friendly summertime preserve creates two jars of rich homemade fruit spread with bright peach flavor and a smooth vanilla finish.

Ingredients

  • 3 pounds peaches, about 12 peaches, pit removed, peach flesh finely chopped
  • 1 cup sugar
  • 2 teaspoons vanilla extract

Instructions

  1. Add the peaches and sugar to a medium-sized deep saucepan and heat over medium until the mixture begins to bubble
  2. Reduce the heat to simmer and stir
  3. Allow the fruit to cook and naturally break down while stirring every 20 minutes
  4. Stir more frequently as the jam thickens
  5. Cook until the jam reaches your preferred consistency
  6. Remove from heat and stir in the vanilla extract
  7. Carefully pour hot jam into clean sterile mason jars
  8. Wipe jar rims clean and place on the seal
  9. Tighten lids until slight resistance is met
  10. Place jars on a kitchen towel and leave undisturbed for 12 hours
  11. Refrigerate for immediate use

Notes

  1. Use ripe peaches for best flavor
  2. This recipe makes approximately two jars
  3. No canning process is required
  4. Jam thickens more after cooling
  5. Store sealed jars refrigerated for up to six months
  6. Always use a clean spoon when serving
