Ingredients
¾ cup warm water (110°F)
½ cup granulated sugar
2¼ teaspoons active dry yeast
1 large egg, room temperature
½ cup milk or evaporated milk
2 teaspoons vanilla extract
3¾ cups all-purpose flour
1 teaspoon salt
3 tablespoons unsalted butter
Vegetable or peanut oil (for frying)
½ cup powdered sugar
Instructions
1. Add warm water, yeast, and half the sugar to a bowl. Let it sit for 5 minutes until foamy.
2. Whisk in milk, vanilla, egg, and remaining sugar.
3. Add half the flour, mix until smooth, then add butter and the rest of the flour.
4. Knead until dough pulls from the sides. Let rise for 2 hours in a warm place.
5. Roll to ½-inch thickness, cut into squares, and rest briefly.
6. Heat oil to 360°F. Fry beignets in small batches until golden on both sides.
7. Remove, drain, and dust with powdered sugar. Serve warm.
Notes
Use a candy thermometer to maintain oil temperature.
Don’t overcrowd the frying pan.
Dough can be stored in the fridge for 48 hours.
Beignets taste best fresh — reheat lightly if needed.
