Description

Soft, pink Strawberry Whoopie Pies made with strawberry cake mix and filled with creamy strawberry cream cheese frosting — an easy, delicious treat for any occasion.


Ingredients

1 box strawberry cake mix

2 large eggs

1/3 cup vegetable oil

4 oz cream cheese (softened)

2 tbsp butter (softened)

1 1/2 cups powdered sugar

1 tsp vanilla extract

2 tbsp fresh strawberry purée


Instructions

1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.

2. Mix cake mix, eggs, and oil until combined into a thick dough.

3. Scoop and drop cookies onto sheets, flatten gently.

4. Bake 9–11 minutes until edges are set.

5. Cool completely on wire racks.

6. For the filling, beat cream cheese and butter until smooth.

7. Add powdered sugar gradually, then mix in vanilla and purée.

8. Spread filling between two cookies to create sandwiches.

9. Refrigerate until ready to serve.

Notes

Store refrigerated up to 5 days.

Freeze unfilled cookies for up to 2 months.

Add white chocolate drizzle for an elegant touch.
