Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 cup chopped strawberries
  • 1 cup chopped rhubarb
  • 2 tablespoons flour (for coating fruit)
  • 1/4 cup brown sugar (topping)
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 375°F and prepare a muffin tin with liners or grease.
  2. Whisk together flour, sugar, baking powder, and salt in a large bowl.
  3. In another bowl, whisk egg, milk, vegetable oil, vanilla extract, and almond extract.
  4. Toss chopped strawberries and rhubarb with flour to coat evenly.
  5. Add wet ingredients to dry ingredients and mix until just combined.
  6. Gently fold in the coated fruit.
  7. Divide batter evenly among 12 muffin cups.
  8. Mix brown sugar and cinnamon, then sprinkle over each muffin.
  9. Bake for 18 to 22 minutes until a toothpick inserted comes out clean.
  10. Cool in the pan for 5 minutes, then transfer to a rack to cool completely.

Notes

  1. Do not overmix the batter to keep muffins light and tender.
  2. Use fresh fruit for best flavor and texture.
  3. If using frozen fruit, thaw and drain well before adding.
  4. Sprinkle topping evenly for consistent crunch.
  5. Allow muffins to cool slightly before removing from pan.
