A fresh and hearty Steak Gorgonzola Salad with balsamic steak, grilled corn, and vibrant greens perfect for a summer dinner.
Ingredients
- 1 lb sirloin steak
- 2 tablespoons balsamic vinegar
- 1 tablespoon Worcestershire sauce
- 1/4 cup extra virgin olive oil
- 1/2 teaspoon dijon mustard
- 1/4 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 4 ounces Gorgonzola cheese, crumbled
- 2 heads endive lettuce, chopped
- 6 cups mixed spring greens
- 1 corn on the cob, husk removed
- 1 tablespoon olive oil
- 2 tablespoons basil, minced
- 2 tablespoons parsley, minced
- 1 clove garlic, minced
- 1 tablespoon lemon zest
- 3 tablespoons balsamic vinegar
- 1/2 cup olive oil
- 1/2 teaspoon dijon mustard
- salt and black pepper
Instructions
- Mix marinade ingredients and coat steak, then refrigerate for 30 minutes
- Prepare gremolata by combining basil, parsley, garlic, and lemon zest
- Preheat grill and cook corn until lightly charred, then remove kernels
- Grill steak for 4 to 5 minutes per side, then rest and slice thinly
- Whisk together balsamic vinaigrette ingredients until smooth
- Toss greens, tomatoes, onion, corn, and cheese with dressing
- Top salad with sliced steak and finish with gremolata and remaining dressing
