A hearty, cheesy Sloppy Joe Casserole featuring ground beef, tangy sauce, and pasta baked to golden perfection — a true comfort food classic.
Ingredients
1 (16-ounce) package penne pasta
1 tablespoon olive oil
1½ pounds ground beef
1 medium yellow onion, chopped
1 small red bell pepper, chopped
1 small green bell pepper, chopped
1 tablespoon paprika
2 teaspoons garlic powder
2 teaspoons kosher salt
2 (15-ounce) cans tomato sauce
½ cup ketchup
2 tablespoons yellow mustard
2 tablespoons Worcestershire sauce
2 tablespoons light brown sugar
2 cups frozen corn
1½ cups shredded Colby-Jack cheese, divided

Instructions
1. Preheat oven to 350°F (175°C).
2. Bring a pot of salted water to a boil. Cook pasta until al dente and drain.
3. In a Dutch oven, heat olive oil and brown the ground beef until no longer pink.
4. Add onions, bell peppers, paprika, garlic powder, and salt; cook until softened.
5. Stir in tomato sauce, ketchup, mustard, Worcestershire sauce, and brown sugar; simmer 5 minutes.
6. Remove from heat and mix in cooked pasta, corn, and ¾ cup cheese.
7. Transfer to a greased 9×13-inch baking dish and top with remaining cheese.
8. Bake 25–30 minutes until bubbly and golden.
9. Let rest 10 minutes before serving.
Notes
Store leftovers up to 4 days in the refrigerator or freeze for 3 months. Reheat covered at 350°F until hot. Customize with ground turkey, spicy cheese, or BBQ sauce for new flavor twists.
