Description

This sauteed summer squash is a quick and healthy side dish made with zucchini, yellow squash, garlic, tomatoes, and parmesan cheese.


Ingredients

  • 1 1/2 tablespoons olive oil
  • 1 large yellow squash chopped
  • 1 large zucchini chopped
  • 3 cloves garlic chopped
  • 1 cup grape tomatoes
  • Kosher salt to taste
  • Dash crushed red pepper
  • 2 tablespoons shredded Parmesan cheese optional
  • Basil vinaigrette optional

Instructions

  1. Heat olive oil in a large skillet over medium-high heat
  2. Add yellow squash and zucchini and cook for 3 minutes stirring occasionally
  3. Add garlic and tomatoes and cook for 2 to 3 minutes until vegetables are crisp-tender and tomatoes are about to burst
  4. Season with salt and crushed red pepper
  5. Sprinkle with Parmesan cheese if using
  6. Drizzle with basil vinaigrette if desired and serve immediately

Notes

  1. Do not overcrowd the pan
  2. Cook over medium-high heat for best texture
  3. Add salt at the end to avoid excess moisture
  4. Serve immediately for best flavor and texture
