Peruvian Grilled Chicken with Creamy Green Sauce is packed with bold flavor and perfect for BBQ or oven cooking.
Ingredients
- 2 pounds chicken thighs (boneless, skinless)
- 5 cloves garlic (peeled)
- 1/3 cup soy sauce
- 2 tablespoons lime juice
- 1 tablespoon extra virgin olive oil
- 2 teaspoons cumin
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- Black pepper
- 3 jalapeños (seeded, ribs removed, chopped)
- 1 cup fresh cilantro leaves
- 2 green onions (chopped)
- 2 cloves garlic
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 1 tablespoon lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons extra virgin olive oil
Instructions
- Blend garlic, soy sauce, lime juice, olive oil, cumin, paprika, oregano, and black pepper until smooth
- Place chicken in a bag and coat with marinade
- Refrigerate and marinate for 8 to 24 hours
- Blend jalapeños, cilantro, green onions, garlic, mayonnaise, yogurt, lime juice, salt, and pepper
- Slowly drizzle in olive oil while blending until smooth
- Preheat grill to 350°F and cook chicken for 5 to 6 minutes per side
- Alternatively bake at 500°F for 30 minutes then cover and cook 15 minutes more
- Ensure internal temperature reaches 165°F before serving
- Serve hot with creamy green sauce

- Adjust spice level by reducing or increasing jalapeños
- Let chicken rest for a few minutes before serving
