Description

A classic homemade Perfect Peach Pie made with fresh peaches, a flaky double crust, warm cinnamon, and a rich, juicy filling that’s perfect for summer gatherings.

Ingredients

  • 1 double pie crust for a 9-inch pie
  • 5 cups fresh peaches, sliced 1/2-inch thick
  • 1 egg, beaten
  • 1 tablespoon lemon juice
  • 1/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 3/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons cold butter

Instructions

  1. Preheat the oven to 450°F.
  2. Toss sliced peaches with lemon juice in a large bowl.
  3. Transfer peaches to a colander and drain for 10 to 15 minutes.
  4. Place one pie crust into a 9-inch pie plate and brush the bottom and sides with beaten egg.
  5. Mix flour, cornstarch, white sugar, brown sugar, cinnamon, and salt in a medium bowl.
  6. Pour the dry mixture over the drained peaches and gently fold until coated.
  7. Pour the peach filling into the bottom crust and dot with cold butter.
  8. Place the top crust over the filling, seal and flute the edges, brush with remaining beaten egg, and cut 4 slits in the top crust.
  9. Place the pie on a baking sheet and bake at 450°F for 10 minutes.
  10. Reduce oven temperature to 350°F and bake for 30 to 35 minutes, until the crust is golden brown and the filling bubbles through the slits.
  11. Cover pie edges with strips of aluminum foil if they brown too quickly.
  12. Cool completely, then refrigerate for at least 2 hours before slicing.

Notes

  1. Drain the peaches for the best filling consistency.
  2. Brush the bottom crust with egg to help prevent sogginess.
  3. Cover crust edges with foil if they brown too quickly.
  4. Cool completely before slicing for clean pieces.
