A classic homemade Perfect Peach Pie made with fresh peaches, a flaky double crust, warm cinnamon, and a rich, juicy filling that’s perfect for summer gatherings.
Ingredients
- 1 double pie crust for a 9-inch pie
- 5 cups fresh peaches, sliced 1/2-inch thick
- 1 egg, beaten
- 1 tablespoon lemon juice
- 1/4 cup all-purpose flour
- 1/4 cup cornstarch
- 3/4 cup white sugar
- 1/4 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 tablespoons cold butter
Instructions
- Preheat the oven to 450°F.
- Toss sliced peaches with lemon juice in a large bowl.
- Transfer peaches to a colander and drain for 10 to 15 minutes.
- Place one pie crust into a 9-inch pie plate and brush the bottom and sides with beaten egg.
- Mix flour, cornstarch, white sugar, brown sugar, cinnamon, and salt in a medium bowl.
- Pour the dry mixture over the drained peaches and gently fold until coated.
- Pour the peach filling into the bottom crust and dot with cold butter.
- Place the top crust over the filling, seal and flute the edges, brush with remaining beaten egg, and cut 4 slits in the top crust.
- Place the pie on a baking sheet and bake at 450°F for 10 minutes.
- Reduce oven temperature to 350°F and bake for 30 to 35 minutes, until the crust is golden brown and the filling bubbles through the slits.
- Cover pie edges with strips of aluminum foil if they brown too quickly.
- Cool completely, then refrigerate for at least 2 hours before slicing.
