Description

Peaches and Cream Cake combines juicy peaches with creamy vanilla batter for an easy homemade dessert perfect for brunch or summer gatherings.


Ingredients

  • 2/3 cup white sugar
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp vanilla
  • 1/3 cup butter melted
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 6 Tbsp whole milk room temperature
  • 67 fresh peaches or canned peaches

Instructions

  1. Preheat oven to 350 F and grease an 8 or 9-inch round cake pan. Add brown sugar to the pan and line the bottom with parchment paper.
  2. Whisk eggs, sugar, vanilla, and melted butter with a hand mixer until pale and foamy.
  3. Add flour and baking powder and stir gently.
  4. Pour in milk and fold in peach chunks.
  5. Pour batter into prepared pan and bake for 55 minutes.
  6. Cool completely and refrigerate overnight before slicing.

Notes

  1. Fresh peaches give the best flavor.
  2. Drain canned peaches well before using.
  3. Refrigerating overnight improves texture and flavor.
