Ingredients
- 4 ripe peaches, pitted and sliced
- 6 cups fresh arugula
- 1/2 cup crumbled goat cheese or feta cheese
- 1/4 cup toasted pecans or walnuts
- 1/4 red onion, thinly sliced
- 1/4 cup fresh basil leaves, torn, optional
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and black pepper, to taste
Instructions
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, salt, and pepper until smooth.
- Taste the dressing and adjust seasoning if needed.
- Add arugula to a large serving bowl.
- Add sliced peaches, crumbled goat cheese or feta, toasted pecans or walnuts, and red onion.
- Add fresh basil if using.
