Description

Pan fried cod cooked until golden and finished with a bright citrus basil butter sauce for a fresh, flavorful seafood dinner that feels light yet satisfying.


Ingredients

  • 2 (8 oz) cod fillets
  • 2 oranges
  • 1 lemon
  • 1/2 cup olive oil, divided
  • 3 tablespoons unsalted butter
  • 1 teaspoon light brown sugar
  • Salt
  • Black pepper
  • Fresh basil

Instructions

  1. Lay the cod fillets in a baking dish.
  2. Zest one orange and the lemon directly over the fish.
  3. Squeeze the juice from the orange and lemon over the cod.
  4. Add half of the olive oil, cover, and marinate for at least one hour.
  5. Preheat the oven to 250°F.
  6. Heat the remaining olive oil in a large oven-safe skillet over medium heat.
  7. Remove excess marinade from the fish and season with salt and pepper.
  8. Cook the cod for 3 to 4 minutes per side until golden.
  9. Transfer the skillet to the oven to keep the fish warm.
  10. Melt butter in a separate pan and add brown sugar with the reserved marinade.
  11. Add juice from the remaining orange and bring to a boil.
  12. Whisk and reduce the sauce by about half.
  13. Stir in fresh basil and remaining butter until melted.
  14. Spoon the sauce over the cod and serve.
