Description

New England Shrimp Rolls with creamy shrimp salad, lemon, and dill make a fresh and easy seafood lunch.


Ingredients

4 hot dog buns

1 pound shrimp

1/3 cup mayonnaise

1/2 teaspoon Dijon mustard

1/2 cup finely chopped celery

1 teaspoon finely chopped dill

1 teaspoon lemon zest

1 teaspoon lemon juice

1/4 teaspoon paprika

1 garlic clove, minced

Optional: melted butter, chopped chives or dill, extra lemon juice


Instructions

1. Bring salted water to a boil and cook shrimp for 2 to 3 minutes until just done

2. Drain and rinse shrimp under cold water, then dry and chop into small pieces

3. Mix mayonnaise, mustard, celery, dill, lemon zest, lemon juice, paprika, and garlic

4. Add shrimp and stir until evenly coated, then season with salt and pepper

5. Fill buns with shrimp mixture and add optional toppings if desired

6. Serve immediately

Notes

Toast buns lightly for added texture if desired.
