Ingredients
- 4 cups sliced peaches (fresh, frozen, or canned)
- 3/4 cup white sugar
- 1/2 cup softened butter
- 1/8 teaspoon salt
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 cup milk
- 1/2 cup sugar (white or brown)
- 1 tablespoon cornstarch
- 1 pinch salt
- 1/4 cup boiling water
Instructions
- Preheat oven to 375°F and spray an 8×8-inch baking dish with nonstick cooking spray
- Arrange sliced peaches evenly in the bottom of the baking dish
- Cream together 3/4 cup sugar and softened butter until smooth
- Add salt, flour, baking powder, and milk and mix into a spreadable batter
- Spread batter evenly over the peaches
- In a separate bowl combine 1/2 cup sugar, cornstarch, and pinch of salt
- Sprinkle sugar mixture evenly over batter
- Heat water until boiling and drizzle over the entire sugar layer
- Bake for 45 minutes until golden and center tests clean
- Let rest briefly before serving
Notes
- Drain canned peaches thoroughly before using
- Frozen peaches can be added directly without thawing
- Optional: add 1 teaspoon cinnamon to the sugar mixture
- Serve warm with whipped cream or vanilla ice cream
- Store covered in refrigerator for up to 3 days
