Description

Easy bakery-style mixed berry muffins with moist centers, fluffy crumbs, tall tops, and colorful pockets of frozen berries. These muffins taste rich without becoming overly sweet or greasy.


Ingredients

  • ½ cup butter, melted and cooled
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1 cup buttermilk or milk
  • 2½ cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1½ cups frozen mixed berries
  • Sparkling sugar, optional

Instructions

  1. Preheat the oven to 425°F. Line a 12-cup muffin pan with paper liners.
  2. Combine the melted butter, granulated sugar, and vanilla extract in a large bowl with a spoon or spatula.
  3. Add the eggs and mix until well combined.
  4. Pour in the buttermilk or milk and stir until fully incorporated.
  5. Whisk the flour, baking powder, baking soda, and salt in a separate bowl.
  6. Add half of the dry mixture to the wet mixture and fold gently.
  7. Add the remaining dry mixture and fold only until the flour disappears. Keep the batter thick and slightly lumpy.
  8. Remove the frozen berries from the freezer and gently fold them into the batter.
  9. Add about 6 tablespoons of batter to each muffin cup.
  10. Sprinkle sparkling sugar over the tops, if desired.
  11. Bake at 425°F for 5 minutes.
  12. Lower the oven temperature to 375°F without opening the oven door.
  13. Bake for another 20 to 25 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  14. Let the muffins rest in the pan for 10 minutes.
  15. Move the muffins to a wire rack and let them finish cooling.

Notes

  1. Keep the berries frozen until you fold them into the batter.
  2. Do not overmix the batter. Stop folding when the flour disappears.
  3. If you use salted butter, reduce the added salt to ¼ teaspoon.
  4. For whole frozen strawberries, microwave about 15 large strawberries for 20 seconds. Keep them partly frozen, cut them into bite-sized pieces, and return them to the freezer until needed.
  5. Store cooled muffins in an airtight container at room temperature for up to 2 days.
  6. Refrigerate the muffins for up to 5 days.
  7. Freeze the muffins for up to 3 months.
