Description

Mediterranean Quesadillas with Spinach, Feta, Mozzarella, and Red Onion bring fresh Mediterranean flavors into a crispy tortilla. This quick 15-minute recipe works perfectly as a healthy lunch idea or light dinner.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)

Instructions

  1. In a mixing bowl, combine mozzarella cheese, feta cheese, spinach, tomato, red onion, and black pepper.
  2. Lay one tortilla flat and place one-fourth of the filling mixture on half of the tortilla.
  3. Fold the tortilla over to cover the filling.
  4. Heat olive oil in a non-stick skillet over medium heat.
  5. Place the filled tortilla in the skillet and cook for 3-4 minutes until golden brown.
  6. Flip carefully and cook for another 3-4 minutes until both sides are crispy.
  7. Remove from heat, slice into wedges, and serve warm.

Notes

  1. Cook on medium heat to prevent burning.
  2. Let the quesadilla rest briefly before slicing.
  3. Add oregano or chili flakes for extra flavor if desired.
