Description

This Mango Curd Tart is a tropical dessert with a toasted coconut graham crust and creamy mango lime curd. It tastes sweet, tangy, buttery, and fresh, making it a stunning fruit tart for baking at home.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsweetened shredded coconut, finely chopped
  • 2 tbsp granulated sugar
  • 5 tbsp unsalted butter, melted
  • Pinch of fine salt
  • 1 1/4 cups smooth mango puree, strained
  • 6 large egg yolks
  • 1/2 cup granulated sugar
  • 1/4 cup fresh lime juice
  • 6 tbsp unsalted butter, cold and cubed
  • 1 tsp lime zest
  • Pinch of sea salt
  • Fresh mango cubes, optional
  • Whipped cream, optional
  • Fresh mint leaves, optional

Instructions

  1. Heat oven to 350°F. Combine graham cracker crumbs, shredded coconut, sugar, and fine salt in a medium bowl.
  2. Stir in melted butter until the mixture looks like damp sand.
  3. Press the crumb mixture firmly into a 9-inch tart pan with a removable bottom.
  4. Bake for 10 to 12 minutes, until the crust turns dark gold. Cool completely.
  5. Blend fresh mango until smooth, then strain it through a fine-mesh sieve. Measure 1 1/4 cups puree.
  6. Whisk mango puree, egg yolks, sugar, and lime juice in a heavy-bottomed saucepan.
  7. Cook over medium-low heat for 8 to 10 minutes while whisking constantly, until the curd coats the back of a spoon. Do not boil.
  8. Remove from heat. Stir in lime zest and sea salt.
  9. Whisk in cold cubed butter, two pieces at a time, until each addition melts fully.
  10. Pour the mango curd into the cooled crust.
  11. Press plastic wrap directly onto the curd surface.
  12. Refrigerate for at least 4 hours, or overnight for cleaner slices.
  13. Remove the tart ring and garnish with fresh mango, whipped cream, or mint before serving.

Notes

  1. Use ripe mangoes for the best flavor and color.
  2. Strain the puree for a silky curd.
  3. Keep the heat low while cooking the curd.
  4. Do not boil the curd, or the yolks may scramble.
  5. Chill overnight for the neatest slices.
  6. Add toppings right before serving.
