Description

Italian Peach Cookies recipe made with soft, buttery dough filled with sweet peach preserves. These shaped cookies resemble real peaches and serve 8 in about 1 hour.


Ingredients

  • For the Dough:
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • For the Filling:
  • 1 cup peach preserves
  • Yellow food coloring, optional
  • For the Coating:
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • Red food coloring, optional

Instructions

  1. In a large bowl, cream together the softened butter and sugar until light and fluffy. Add eggs, vanilla extract, and almond extract, then mix well.
  2. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry mixture to the wet ingredients, then mix until just combined.
  3. Cover the dough with plastic wrap and chill in the refrigerator for about 30 minutes to make it easier to handle.
  4. Preheat your oven to 350°F or 175°C and line baking sheets with parchment paper.
  5. Take a small amount of dough, about 1 tablespoon, and flatten it in your palm. Place 1 teaspoon of peach preserves in the center, fold the dough over, and roll it into a ball.
  6. Place the balls on the prepared baking sheets, spacing them about 2 inches apart. Bake for 12 to 15 minutes or until the bottoms turn lightly golden.
  7. Remove from the oven and let the cookies cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
  8. In a small bowl, mix granulated sugar and cinnamon. If using food coloring, add a few drops of red coloring to the sugar. Roll the cooled cookies in the sugar mixture until well coated.

  2. Chill the dough to help the cookies keep their shape and reduce spreading during baking.
