Description

Honey Glazed Salmon Bowl is a quick and healthy pescatarian dinner featuring tender sweet and savory salmon served over brown rice with creamy avocado, crisp cucumber, and a light lime dressing.


Ingredients

  • 2 salmon fillets skinless
  • 2 tablespoons avocado oil
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 teaspoon sriracha
  • 1 cup brown rice cooked
  • 1 avocado diced
  • 1 cup cucumber diced
  • 2 tablespoons olive oil
  • 2 tablespoons cilantro chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon light mayonnaise
  • 1 teaspoon paprika

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Cut salmon fillets into cubes and place them in a mixing bowl.
  3. Add avocado oil, honey, soy sauce, and sriracha to the salmon and gently toss to coat.
  4. Spread the salmon pieces on a parchment lined baking sheet.
  5. Roast the salmon for about 10 minutes until nearly cooked through.
  6. Switch the oven to broil and cook the salmon for an additional 2 to 3 minutes to caramelize the glaze.
  7. In a small bowl whisk together light mayonnaise, lime juice, and paprika to create the creamy dressing.
  8. In another bowl combine diced avocado, cucumber, olive oil, cilantro, and lime juice.
  9. Place warm brown rice into serving bowls.
  10. Top the rice with roasted honey glazed salmon, cucumber mixture, and drizzle with the creamy dressing.

Notes

  1. Maple syrup can replace honey for a different sweetness profile.
  2. Tamari can replace soy sauce for a gluten free option.
  3. Quinoa or cauliflower rice can replace brown rice for variation.
  4. Adjust sriracha to control the heat level.
