Ingredients
- 2 tablespoons olive oil or butter
- 3 ribs celery diced
- 3 large carrots diced
- 1 medium onion diced
- 2 cloves garlic minced
- 10 cups chicken broth
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon salt to taste
- 1/2 teaspoon black pepper to taste
- 4 cups dry egg noodles
- 3 cups rotisserie chicken meat shredded
Instructions
- Heat olive oil in a large pot over medium high heat
- Add celery carrots onion and garlic then cook for 6 to 7 minutes until softened
- Add chicken broth Italian seasoning salt and black pepper then bring to a boil
- Reduce heat slightly and allow broth to simmer
- Add dry egg noodles and cook for 8 to 10 minutes until tender
- Stir in shredded rotisserie chicken
- Remove from heat and serve hot

- Use rotisserie chicken to reduce cooking time
- Avoid overcooking noodles to maintain texture
