Description
Easy Hawaiian Chicken Kabobs with juicy chicken, sweet pineapple, and a rich tropical glaze perfect for grilling.
Ingredients
- 3/4 cup pineapple juice
- 1/2 cup coconut aminos
- 1/2 cup ketchup
- 1/2 cup brown sugar
- 2 tablespoons Frank’s Red Hot sauce
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 1/2 lbs chicken thighs, skinless and boneless
- 20 oz pineapple chunks
- 6 kabob skewers
- Sea salt to taste
- Black pepper to taste
Instructions
- In a saucepan combine pineapple juice coconut aminos ketchup brown sugar hot sauce garlic and ginger then bring to a boil
- Reduce heat and simmer for 10 to 12 minutes until thickened then let cool
- Cut chicken into bite sized pieces and coat with sauce then marinate for at least one hour
- Drain pineapple and cut into similar sized pieces
- Thread chicken and pineapple onto skewers and season with salt and pepper
- Preheat grill to medium high heat and cook kabobs for 10 to 12 minutes turning occasionally and brushing with sauce
- Serve with remaining sauce on the side
Notes
- Soak wooden skewers in water before grilling to prevent burning
- Do not overcrowd skewers to allow even cooking
- Use medium high heat to avoid burning the sauce
- Let kabobs rest for a few minutes before serving
