Description

Tender hatch green chile steak roll ups filled with creamy cheese, spinach, and smoky chiles, grilled to perfection.


Ingredients

4 hatch green chiles (roasted, peeled, seeded)

1.5 lb sirloin steak (thin sliced)

1 tsp steak spice blend

2 oz queso fresco (crumbled)

1 cup baby spinach

Salt and white pepper

1/2 cup Greek yogurt

1/4 cup cilantro (chopped)

1 tbsp lime zest

1 tbsp lime juice


Instructions

1. Lay steak slices flat and season evenly

2. Add chiles, cheese, and spinach

3. Roll tightly and secure with toothpicks

4. Heat pan over medium-high heat

5. Sear seam-side down first

6. Turn gently and cook all sides

7. Rest for 5 minutes before slicing

8. Serve with yogurt sauce

Notes

Do not overfill rolls

Use thin steak for best results

Let meat rest before slicing
