Description
A hearty grouse cheese recipe that pairs tender wild grouse with creamy Gruyère for a rustic yet comforting meal.
Ingredients
2 grouse breasts
1 cup buttermilk
2 cloves garlic, minced
2 sprigs rosemary
2 sprigs thyme
Salt and black pepper to taste
2 tbsp butter
1 cup Gruyère cheese, grated
1/2 cup cream
1 tsp Dijon mustard
Instructions
1. Soak grouse breasts in buttermilk with herbs for at least 4 hours or overnight.
2. Remove from marinade, pat dry, season with salt, pepper, and garlic.
3. Sear grouse breasts in butter over medium-high heat until golden.
4. Transfer to oven and roast at 400°F for 10–12 minutes until just cooked.
5. Meanwhile, make cheese sauce by melting Gruyère with cream and Dijon mustard.
6. Remove grouse from oven, let rest for 5 minutes.
7. Serve grouse topped with cheese sauce and sides of your choice.
Notes
Best served with roasted root vegetables or wild rice.
Do not overcook grouse; aim for medium for tenderness.
