Description
Soft and chewy Gingerbread Cookie Bars packed with warm spices and topped with creamy cream cheese frosting. A perfect easy holiday dessert for Christmas.
Ingredients
- 1/2 cup butter melted
- 3/4 cup granulated sugar
- 1/4 cup dark brown sugar
- 1/2 teaspoon vanilla extract
- 1/3 cup molasses
- 1 large egg
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon salt
- 6 ounces cream cheese softened
- 3 tablespoons butter softened
- 2 1/4 cups powdered sugar
- 3/4 teaspoon vanilla extract
- holiday sprinkles optional
Instructions
- Preheat oven to 350°F and grease a 9×13-inch baking pan
- In a bowl mix flour, baking soda, cinnamon, ginger, nutmeg, cloves, and salt
- In another bowl beat melted butter, granulated sugar, and brown sugar until smooth
- Add molasses and vanilla extract and mix well
- Add egg and mix until fully combined
- Gradually add dry ingredients into wet ingredients and mix until combined
- Spread the dough evenly into the prepared pan
- Bake for 15 to 20 minutes until a toothpick shows a few moist crumbs
- Cool completely in the pan before frosting
- Beat cream cheese and butter until smooth and fluffy
- Add powdered sugar and vanilla extract and mix until creamy
- Spread frosting evenly over cooled bars
- Add holiday sprinkles if desired
- Slice into bars and serve
Notes
- Store in an airtight container in the refrigerator for up to 5 days
- Let bars sit at room temperature before serving for best texture
- Freeze unfrosted bars for longer storage
- Frost after thawing for best results
