Description

Soft and chewy Gingerbread Cookie Bars packed with warm spices and topped with creamy cream cheese frosting. A perfect easy holiday dessert for Christmas.


Ingredients

  • 1/2 cup butter melted
  • 3/4 cup granulated sugar
  • 1/4 cup dark brown sugar
  • 1/2 teaspoon vanilla extract
  • 1/3 cup molasses
  • 1 large egg
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 6 ounces cream cheese softened
  • 3 tablespoons butter softened
  • 2 1/4 cups powdered sugar
  • 3/4 teaspoon vanilla extract
  • holiday sprinkles optional

Instructions

  1. Preheat oven to 350°F and grease a 9×13-inch baking pan
  2. In a bowl mix flour, baking soda, cinnamon, ginger, nutmeg, cloves, and salt
  3. In another bowl beat melted butter, granulated sugar, and brown sugar until smooth
  4. Add molasses and vanilla extract and mix well
  5. Add egg and mix until fully combined
  6. Gradually add dry ingredients into wet ingredients and mix until combined
  7. Spread the dough evenly into the prepared pan
  8. Bake for 15 to 20 minutes until a toothpick shows a few moist crumbs
  9. Cool completely in the pan before frosting
  10. Beat cream cheese and butter until smooth and fluffy
  11. Add powdered sugar and vanilla extract and mix until creamy
  12. Spread frosting evenly over cooled bars
  13. Add holiday sprinkles if desired
  14. Slice into bars and serve

Notes

  1. Store in an airtight container in the refrigerator for up to 5 days
  2. Let bars sit at room temperature before serving for best texture
  3. Freeze unfrosted bars for longer storage
  4. Frost after thawing for best results
