Ingredients
- 3 cups sweet corn
- 3 tablespoons mayonnaise
- 1 tablespoon sriracha
- 1/3 cup cotija cheese
- 1 teaspoon chili powder
- 2 tablespoons chopped cilantro
- 1 lime cut into wedges
- 1 tablespoon butter
- Salt to taste
Instructions
- Heat butter in a skillet over medium heat
- Add sweet corn and cook for about 5 minutes until warm
- Mix mayonnaise and sriracha together in a small bowl
- Place warm corn into serving cups
- Stir the sauce into the corn until evenly coated
- Top with cotija cheese, chili powder, and chopped cilantro
- Squeeze fresh lime juice over the corn and serve immediately
