Crockpot Teriyaki Chicken

Description

Slow cooker teriyaki chicken with shredded chicken breasts, homemade teriyaki sauce, sesame seeds, and green onions.


Ingredients

1 ½ lbs boneless skinless chicken breasts

2 tsp garlic, minced

2 tsp ginger, minced

¼ cup honey

3 tbsp brown sugar

½ cup low-sodium soy sauce

2 tsp toasted sesame oil

2 tbsp rice vinegar

¼ cup cold water

2 tbsp cornstarch

1 tbsp sesame seeds

2 tbsp sliced green onions


Instructions

1. Place the chicken breasts in a slow cooker.

2. Whisk together garlic, ginger, honey, brown sugar, soy sauce, sesame oil, and rice vinegar.

3. Pour mixture over the chicken.

4. Cook on HIGH 3 hours or LOW 5–6 hours.

5. Shred the chicken and strain sauce.

6. Simmer sauce with cornstarch mixture until thickened.

7. Coat chicken in sauce, top with sesame seeds and green onions.

Notes

For a healthier version, replace some soy sauce with coconut aminos. Add steamed vegetables in the final hour for a complete meal.
