Description

Crockpot Chicken Fajitas are a flavorful and hassle-free meal perfect for busy weeknights. Tender chicken breasts are slow-cooked with vibrant bell peppers and zesty spices, creating a mouthwatering dish that’s ready when you are.


Ingredients

4 boneless, skinless chicken breasts (about 1.5 lbs)

1 red bell pepper, sliced

1 green bell pepper, sliced

1 yellow bell pepper, sliced

1 large onion, sliced

2 tsp cumin

2 tsp chili powder

1 tsp garlic powder

2 tbsp olive oil

Juice of 1 lime

Salt and pepper to taste


Instructions

1. Slice the bell peppers and onion into thin strips.

2. In a bowl, combine chicken with olive oil, cumin, chili powder, garlic powder, salt, and pepper.

3. Layer the vegetables at the bottom of the crockpot, then place chicken on top.

4. Drizzle lime juice over everything.

5. Cover and cook on low for 6 hours or high for 3 hours, until chicken reaches 165°F.

6. Shred chicken with two forks and mix with vegetables before serving in tortillas.

Notes

Serve with warm tortillas, guacamole, and salsa.

Store leftovers in airtight containers for up to 4 days.
