Description

Crock Pot Cheesesteak Tortellini combines tender beef, bell peppers, onions, mushrooms, and cheese-filled tortellini in a rich cream cheese and provolone sauce. Ingredients

  • 1 1/2 pounds shaved beef steak, ribeye, sirloin, or ground beef
  • 1 large onion, thinly sliced
  • 2 bell peppers, sliced
  • 8 ounces mushrooms, sliced, optional
  • 3 cups beef broth
  • 8 ounces cream cheese, softened and cubed
  • 2 cups shredded mozzarella or provolone cheese, divided
  • 20 ounces cheese tortellini, fresh or frozen
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • Fresh chopped parsley for garnish, optional

Instructions

  1. Heat a large skillet over medium-high heat. Add the beef and cook for 3 to 5 minutes, stirring occasionally, until lightly browned. Cook ground beef until no pink remains, then drain any excess fat.
  2. Add the browned beef, sliced onion, bell peppers, mushrooms, beef broth, garlic powder, Italian seasoning, salt, and black pepper to a 6-quart slow cooker. Stir gently to combine.
  3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until the beef and vegetables are tender.
  4. Add the softened cream cheese and stir until it melts completely into the broth and creates a smooth sauce.
  5. Stir in 1 1/2 cups of shredded mozzarella or provolone cheese until melted and evenly combined.
  6. Add the tortellini during the final 20 to 30 minutes of cooking. Cover and cook until the pasta is tender but not mushy, checking fresh tortellini earlier if needed.
  7. Sprinkle the remaining 1/2 cup of shredded cheese over the top. Cover for about 5 minutes, until the cheese melts.
  8. Garnish with fresh parsley and serve hot.

Notes

  1. Browning the beef is optional, but it adds deeper flavor and removes excess grease.
  2. Fresh tortellini may cook in 15 to 20 minutes, while frozen tortellini may require closer to 30 minutes.
