Description

Creamy Tomato Basil Chicken is a one pan, 25 minute chicken skillet with juicy chicken breasts simmered in a rich tomato basil cream sauce.


Ingredients

  • 1 tablespoon canola oil
  • 2 boneless skinless chicken breasts (about 1 lb or 454 g)
  • Salt and pepper to taste
  • 1 tablespoon minced garlic (23 cloves)
  • 3/4 teaspoon salt
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon black pepper
  • 1 pinch crushed red pepper flakes (optional)
  • 398 ml canned diced tomatoes with Italian herbs
  • 3/4 cup tomato pasta sauce (marinara or seasoned tomato sauce)
  • 3/4 cup whipping cream (or whole milk or half and half)
  • 1 tablespoon corn starch
  • 2 tablespoons freshly chopped basil (or 1 tablespoon basil pesto)
  • Freshly grated Parmesan for garnish

Instructions

  1. Halve chicken breasts lengthwise to create thin cutlets.
  2. Heat oil in a large skillet over medium-high heat and season chicken with salt and pepper.
  3. Brown chicken on each side for 2 to 4 minutes per side.
  4. Remove chicken from the pan and keep covered.
  5. Add garlic, salt, dried basil, black pepper, and red pepper flakes to the skillet and cook for 1 minute without burning the garlic.
  6. Stir in diced tomatoes and tomato sauce, scraping browned bits from the bottom of the pan.
  7. Whisk cream and corn starch together until smooth and add to the skillet, stirring to combine.
  8. Return chicken to the pan and bring to a low simmer.
  9. Reduce heat to medium-low, cover, and cook until chicken reaches 165°F internally and sauce thickens slightly.
  10. Garnish with fresh basil and Parmesan before serving.

Notes

  1. Slice chicken evenly for faster and even cooking.
  2. Do not overcrowd the pan when browning the chicken.
  3. Simmer uncovered a few extra minutes if you prefer a thicker sauce.
  4. Store leftovers in an airtight container in the refrigerator for up to 3 days.
