Description
A creamy, smoky, and refreshing pasta salad inspired by classic Mexican street corn. Perfect for BBQs, potlucks, and summer gatherings.
Ingredients
4 oz cream cheese (softened)
1/3 cup sour cream
2 tbsp olive oil
1–2 grated garlic cloves
1 tbsp chives, chopped
Salt & pepper
3/4 cup Cotija cheese, crumbled
1 lb short pasta
2 cups grilled corn
1/2 cup fresh basil
1/2 cup cilantro
1/2 cup diced spicy cheddar
1 avocado, diced
4 tbsp butter
2 tsp smoked paprika
2 tbsp chili powder
1/4–2 tsp cayenne pepper
1/4 cup mayonnaise
2 tbsp lime juice
Instructions
1. Cook pasta until al dente and drain.
2. Grill corn until charred; slice kernels off.
3. Mix cream cheese, sour cream, oil, garlic, chives, salt, and Cotija.
4. Add pasta, corn, basil, cilantro, cheddar, and avocado; toss gently.
5. Melt butter with spices to make chili butter; drizzle over salad.
6. Whisk mayonnaise and lime juice for dressing; pour over salad.
7. Serve warm or cold with extra Cotija and lime wedges.
Notes
Store in airtight container up to 4 days.
Add avocado before serving to keep fresh.
For extra spice, use chipotle mayo.
