Description

A quick Mediterranean chickpea feta avocado salad packed with protein, healthy fats, and fresh herbs.


Ingredients

1 (15-ounce) can chickpeas, drained and rinsed

1 avocado, diced

4 oz feta cheese, crumbled

½ cup red onion, thinly sliced

½ cup parsley, chopped

¼ cup mint, chopped

3 tbsp olive oil

2 tbsp lemon juice

1 clove garlic, minced

½ tsp dried oregano

Salt and pepper to taste


Instructions

1. Combine chickpeas, avocado, feta, onion, parsley, and mint in a bowl.

2. Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper in a small bowl.

3. Pour dressing over salad and toss gently.

4. Serve immediately or chill for 15 minutes before serving.

Notes

Toss avocado in lemon juice to prevent browning.

Store salad in an airtight container for up to 3 days.

Add quinoa or grilled chicken for a heartier version.
