Description

This Chicken Parmesan Casserole combines tender shredded chicken, pasta, marinara sauce, and melted mozzarella and Parmesan cheese baked into a comforting Italian-American dinner perfect for busy weeknights.


Ingredients

  • 4 cups cooked chicken shredded
  • 2 cups marinara sauce
  • 1 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups cooked pasta penne or rotini
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C)
  2. Heat olive oil in a large skillet over medium heat
  3. Add shredded chicken garlic powder Italian seasoning salt and pepper and cook for about 5 minutes until warmed
  4. In a mixing bowl combine cooked pasta marinara sauce half of the Parmesan cheese and half of the mozzarella cheese
  5. Mix well until pasta is evenly coated with sauce and cheese
  6. Add the seasoned chicken to the pasta mixture and stir until evenly distributed
  7. Pour the mixture into a greased 9×13 inch baking dish and spread evenly
  8. Top with the remaining mozzarella and Parmesan cheese
  9. Cover with aluminum foil and bake for 30 minutes
  10. Remove the foil and bake an additional 10 minutes until the cheese becomes bubbly and lightly golden
  11. Remove from oven allow to cool slightly garnish with basil or parsley and serve warm

Notes

  1. Use rotisserie chicken to save preparation time
  2. Add vegetables like spinach mushrooms or bell peppers for extra nutrition
  3. Whole wheat pasta can be used for a higher fiber option
  4. Store leftovers in an airtight container in the refrigerator for up to 3 days
