Ingredients
- 3 cups frozen hash browns, slightly thawed
- 2–3 cups cooked chicken, diced or shredded
- 1/4 cup bacon bits
- 1 cup shredded cheddar cheese
- 1 can (10.5 ounces) condensed cream of chicken soup
- 1/2 cup milk
- 12 ounces frozen mixed vegetables, slightly thawed
- 1/8 teaspoon dried thyme
- 12–14 Ritz crackers, crushed
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, mix hash browns, chicken, bacon bits, 1 cup cheese, vegetables, soup, milk, and thyme until combined.
- Lightly grease a 7×11-inch baking dish and spread the mixture evenly.
- Combine crushed crackers with remaining cheese and sprinkle over the casserole.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake 15 minutes until golden and bubbly.
- Let rest 10–15 minutes before serving.
