Cheesy Potatoes Recipe

Description

Creamy cheesy potatoes casserole loaded with cheddar and parmesan. A comforting side dish perfect for family dinners and holiday meals.


Ingredients

3 pounds Russet potatoes peeled & diced

1 (10.5 ounce) can condensed cream of chicken soup

1 cup sour cream

1/4 cup butter melted

1/3 cup scallions chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

Pepper to taste

2 cups grated sharp cheddar divided

1 cup freshly grated parmesan divided


Instructions

1. Prep the potatoes and boil them until just tender. Drain thoroughly.

2. Preheat oven to 350F and grease a 9×13 casserole dish. Add potatoes to the dish.

3. In a bowl mix condensed soup, sour cream, melted butter, scallions, garlic powder, onion powder, salt and pepper.

4. Stir in half of the cheddar and half of the parmesan cheese.

5. Pour the mixture over the potatoes and gently toss until evenly coated.

6. Spread the potatoes evenly and top with the remaining cheeses.

7. Bake uncovered for about 45 minutes until cheese melts and turns golden.

8. Let the casserole rest for 5–10 minutes before serving.

Notes

Frozen cubed hashbrowns may replace fresh potatoes.

Cooking time may vary slightly depending on potato size.
