Description

Crockpot Cheeseburger Soup loaded with ground beef, cheddar, bacon, and tender potatoes. A rich and hearty slow cooker comfort food that tastes like a classic cheeseburger in a bowl.


Ingredients

  • 4 bacon strips
  • 1 pound lean ground beef
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups beef broth
  • 3 medium russet potatoes, peeled and diced (about 1-inch cubes)
  • 1 (10.5 ounce) can cheddar cheese soup
  • 1 cup heavy whipping cream
  • 8 ounces freshly grated cheddar cheese, plus more for serving
  • Pickle slices, optional for serving
  • Diced tomatoes, optional for serving

Instructions

  1. Cook bacon in a large skillet over medium heat until crisp, about 5 minutes per side. Transfer to a paper towel-lined plate, reserve 1 tablespoon bacon grease, and chop bacon for topping.
  2. Add ground beef to the skillet and cook over medium-high heat, breaking it apart as it browns. After about 7 minutes, stir in onion, garlic, salt, and pepper. Cook a few more minutes and drain excess grease.
  3. Transfer the beef mixture to a 6-quart crockpot. Add beef broth, diced potatoes, and cheddar cheese soup. Stir well to combine.
  4. Cover and cook on low for 6 to 8 hours or on high for 4 hours, until potatoes are tender.
  5. During the last 30 minutes of cooking, stir in heavy whipping cream and freshly grated cheddar cheese. Mix until smooth and creamy.
  6. Ladle into bowls and top with crispy bacon, extra cheddar, pickle slices, or diced tomatoes before serving.

Notes

  1. Brown the ground beef before adding it to the slow cooker for deeper flavor and better texture.
  2. Add the cream and cheese at the end of cooking to prevent curdling.
  3. For a thicker soup, mash a few of the cooked potatoes directly in the crockpot before serving.
  4. Reheat gently and avoid boiling to keep the texture smooth.
