Ingredients
2.5 lbs Yukon Gold potatoes
4 tbsp unsalted butter or olive oil
1 large yellow onion, chopped
5–6 cloves garlic, minced
1/4 cup flour
4 cups broth
2 cups milk
1/2 cup heavy cream
2 cups sharp cheddar cheese
Parsley, chives, thyme
Salt, pepper, paprika to taste
Instructions
1. Sauté onion and garlic in butter until fragrant.
2. Add flour and stir to create roux.
3. Gradually whisk in broth and bring to simmer.
4. Add potatoes, cook until tender.
5. Blend half the soup until smooth.
6. Stir in milk, cream, and herbs.
7. Remove from heat, melt in cheese.
8. Season and garnish before serving.
Notes
Blend partially for best creamy-chunky texture.
Avoid boiling after adding dairy.
Use freshly shredded cheddar for smooth melt.
