Description

A fast, easy one bowl Carrot Zucchini Bread recipe that bakes into a soft, moist loaf with carrots, zucchini, cinnamon, and vanilla.


Ingredients

  • 1 large egg
  • 1/2 cup light brown sugar, packed
  • 1/3 cup liquid-state coconut oil, canola oil, or vegetable oil
  • 1/4 cup granulated sugar
  • 1/4 cup sour cream or Greek yogurt
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch salt, optional and to taste
  • 1 cup grated carrots, loosely measured
  • 1 cup grated zucchini, loosely measured
  • 1/2 cup walnuts or raisins, optional

Instructions

  1. Preheat oven to 350°F and prepare one 9×5-inch loaf pan with floured cooking spray, or grease and flour the pan.
  2. In a large bowl, whisk together the egg, brown sugar, oil, granulated sugar, sour cream, vanilla extract, and cinnamon until combined.
  3. Add the flour, baking powder, baking soda, and optional salt. Stir gently until just combined.
  4. Fold in the grated carrots, grated zucchini, and optional walnuts or raisins.
  5. Transfer the thick batter to the prepared loaf pan and smooth the top lightly with a spatula.
  6. Bake for 52 to 58 minutes, or until the top is golden, the center is set, and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  7. Cool the bread in the pan for about 15 minutes.
  8. Transfer the loaf to a wire rack and cool completely before slicing and serving.

Notes

  1. Tent the pan loosely with foil at the 35-minute mark if the top or sides brown too quickly.
  2. Baking time can vary because carrots and zucchini contain different moisture levels.
  3. Bake until the bread tests done in the center rather than relying only on the clock.
  4. Store the cooled bread airtight at room temperature for 5 to 7 days.
  5. Freeze tightly wrapped bread for up to 4 months.
  6. Refrigeration is optional, but it may dry the bread faster.
