Description
A creamy and spicy Slow Cooker Cajun Potato Soup made with tender potatoes, colorful vegetables, and bold Cajun spices for the perfect cozy meal.
Ingredients
6 cups peeled and diced potatoes
1 small onion, chopped
3 cloves garlic, minced
1 bell pepper, chopped
2 celery stalks, diced
1 tsp smoked paprika
1 tsp Cajun seasoning
1/2 tsp dried thyme
Salt and pepper to taste
4 cups chicken or vegetable broth
1 cup heavy cream or half-and-half
1 tbsp butter
1/2 cup shredded cheddar cheese (optional)
1/4 cup chopped green onions (for garnish)
1/4 tsp cayenne pepper (optional)
Instructions
1. Add potatoes, onion, garlic, bell pepper, celery, paprika, Cajun seasoning, thyme, salt, pepper, and broth to the slow cooker.
2. Cover and cook on low for 6–7 hours or high for 3–4 hours until potatoes are soft.
3. Mash some of the potatoes for a thicker texture.
4. Stir in cream, butter, and cayenne; cook another 20 minutes on high.
5. Taste and adjust seasoning.
6. Serve hot with cheese and green onions.
Notes
This soup thickens naturally as it cools. For extra heat, add andouille sausage or a few drops of hot sauce. Vegetarian? Use vegetable broth and skip meat toppings.
