Description
This Slow Cooker Butter Chicken is a rich, creamy, and flavorful dish that’s easy to prepare. The slow cooker does all the work, making it perfect for a hassle-free dinner that the whole family will love.
Ingredients
2 lbs boneless skinless chicken thighs, cut into bite-sized pieces
1 large onion, finely chopped
3 cloves garlic, minced
1 tbsp fresh ginger, minced
1 can (15 oz) tomato sauce
1 can (14 oz) coconut milk
½ cup plain Greek yogurt
¼ cup heavy cream
¼ cup unsalted butter, cut into small pieces
3 tbsp garam masala
1 tbsp curry powder
1 tbsp ground cumin
1 tbsp paprika
1 tsp turmeric
1 tsp chili powder
1 tsp salt
½ tsp black pepper
½ tsp cinnamon
¼ tsp cayenne pepper (optional)
Fresh cilantro, chopped (for garnish)
Cooked basmati rice & naan bread for serving
Instructions
1. Cut the chicken into bite-sized pieces.
2. Finely chop the onion, and mince the garlic and ginger.
3. Add onion, garlic, and ginger to slow cooker.
4. Stir in tomato sauce, coconut milk, yogurt, and cream.
5. Add all spices and stir well.
6. Add chicken and mix until coated.
7. Cover and cook on low for 6–8 hours or high for 3–4 hours.
8. Stir in butter 15 minutes before serving.
9. Serve over rice, garnish with cilantro, and enjoy.
Notes
Use chicken thighs for the juiciest texture.
For a dairy-free version, use coconut cream instead of yogurt and butter.
Leftovers taste even better the next day.
