Description

Blueberry Peach Feta Salad is a sweet savory summer dish with fresh fruit, feta cheese, and a light lemon basil vinaigrette.


Ingredients

  • 1 pint fresh blueberries
  • 2 peaches diced
  • 2 Persian cucumbers sliced
  • 1/2 cup crumbled feta
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 1 tablespoon finely chopped basil
  • Kosher salt to taste
  • Fresh ground black pepper to taste

Instructions

  1. Combine blueberries, diced peaches, sliced cucumbers, and crumbled feta in a large bowl
  2. In a separate jar or bowl, whisk together lemon juice, Dijon mustard, honey, olive oil, chopped basil, salt, and pepper
  3. Pour the vinaigrette over the salad ingredients
  4. Gently toss the salad to combine without crushing the fruit
  5. Taste and adjust seasoning if needed
  6. Garnish with extra basil and serve immediately or chill briefly before serving

  1. Use ripe peaches for the best flavor and sweetness
