Description
A fresh, colorful no-cook salsa made with black beans, sweet corn, red bell pepper, onion, scallions, cilantro, lime juice, olive oil, oregano, and smoked paprika. Serve it chilled with tortilla chips or use it as a topping for tacos, grilled meats, rice bowls, and salads.
Ingredients
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) corn, drained and rinsed, or 2 cups fresh corn kernels
- 1/3 cup finely chopped red onion
- 1 red bell pepper, chopped
- 3 tablespoons chopped scallions
- 1/4 cup chopped fresh cilantro
- Juice of 2 limes
- 1/4 cup olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
Instructions
- Drain and rinse the black beans and corn thoroughly. Shake away excess water or pat the ingredients dry.
- Add the black beans, corn, red onion, red bell pepper, scallions, and cilantro to a large mixing bowl. Stir gently until evenly combined.
- Whisk the lime juice, olive oil, dried oregano, smoked paprika, salt, and black pepper in a separate medium bowl.
- Pour the dressing over the black bean and corn mixture.
- Fold the ingredients together gently until the salsa looks evenly coated.
- Taste and add more salt, pepper, or lime juice as needed.
- Cover the bowl and refrigerate for at least 1 hour before serving.
- Stir the salsa again and serve chilled with tortilla chips or as a topping.
Notes
- Drain the beans and corn well to prevent watery salsa.
- Cut the vegetables into small, evenly sized pieces for easier scooping.
- For extra heat, add one finely chopped jalapeño or serrano pepper.
- Fresh, frozen, or canned corn will work. Thaw and dry frozen corn before using.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Do not freeze the finished salsa because the fresh vegetables will soften.
