Description

The Best Zucchini Bread is a wonderfully moist quick bread packed with fresh zucchini, rich brown sugar, and warm vanilla flavor. Perfect for breakfast, dessert, snacks, or sharing with family and friends.


Ingredients

  • 2 cups (250 g) all-purpose flour
  • ¾ teaspoon baking powder
  • ¾ teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 cup (200 g) light brown sugar
  • ½ cup (100 g) granulated sugar
  • ¾ cup (164 g) vegetable oil, canola recommended
  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature
  • 2½ cups grated zucchini, lightly pressed to remove excess moisture

Instructions

  1. Preheat oven to 350°F (175°C). Prepare a 9×5-inch loaf pan with non-stick spray or butter and flour.
  2. Combine flour, baking powder, baking soda, salt, brown sugar, granulated sugar, vegetable oil, vanilla extract, and eggs in a large bowl.
  3. Stir until a thick batter forms.
  4. Add grated zucchini and stir until fully combined.
  5. Pour batter into the prepared loaf pan and spread evenly.
  6. Bake for 65–75 minutes or until a toothpick inserted into the center comes out with moist crumbs but no wet batter.
  7. Cool slightly before slicing and serving.

Notes

  1. Do not overmix the batter.
  2. Lightly press moisture from zucchini but avoid excessive squeezing.
  3. Tent with foil if the top browns too quickly.
  4. Store covered at room temperature for up to 3 days.
