Description

Crispy Jalapeno Popper Beef Taquitos filled with creamy spicy ground beef, jalapenos, cream cheese, salsa, and melted pepper jack cheese wrapped in golden crispy tortillas.


Ingredients

  • 12 TortillaLand raw medium tortillas
  • 1 pound lean ground beef
  • 1/2 small onion chopped
  • 24 jalapenos seeded and diced
  • 3 garlic cloves minced
  • 1 1/2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon dried oregano
  • 8 oz cream cheese softened
  • 1/2 cup salsa medium
  • 2 cups freshly grated Pepper Jack cheese divided
  • 1 teaspoon olive oil

Instructions

  1. Add ground beef, chopped onions, and diced jalapenos to a large skillet and cook over medium heat until beef is cooked and onions soften
  2. Add minced garlic and cook for about 30 seconds
  3. Drain any excess fat from the skillet
  4. Stir in chili powder, cumin, smoked paprika, salt, and oregano
  5. Add salsa and cream cheese and cook over medium low heat until cream cheese melts completely while stirring
  6. Stir in 1 cup pepper jack cheese until melted then remove mixture from heat
  7. Place about 1/4 cup filling onto the bottom third of each tortilla
  8. Sprinkle about 1 tablespoon remaining pepper jack cheese on top of filling
  9. Roll tortillas tightly to form taquitos
  10. Heat olive oil in a large nonstick skillet over medium heat
  11. Cook taquitos in batches rotating until golden brown and crispy on all sides
  12. Transfer cooked taquitos to a paper towel lined plate and serve warm

Notes

  1. Adjust the number of jalapenos to control the spice level
  2. Freshly grated cheese melts better than packaged shredded cheese
  3. Serve with salsa, guacamole, sour cream, or queso dip
  4. Store leftovers in the refrigerator for up to four days and reheat in oven or air fryer for best crispiness
