Description

These Beef & Cheese Empanadas are a delightful fusion of savory ground beef, melted cheddar cheese, and spices, all encased in a flaky, golden pastry.


Ingredients

1 tablespoon olive oil

1 lb ground beef

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon paprika

½ teaspoon chili powder

Salt and pepper to taste

1 cup shredded cheddar cheese

1 package (14 oz) refrigerated pie crusts

1 egg, beaten (for egg wash)


Instructions

1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

2. In a large skillet, heat olive oil and sauté onion for 3–4 minutes.

3. Add minced garlic and cook for 1 minute.

4. Add ground beef, breaking it apart as it browns. Stir in cumin, paprika, chili powder, salt, and pepper.

5. Remove from heat and stir in shredded cheese until melted.

6. Roll out pie crusts and cut into 4-inch circles.

7. Add a spoonful of filling to each circle, fold into a half-moon, and seal edges with a fork.

8. Brush tops with beaten egg.

9. Bake 20–25 minutes until golden brown.

10. Let cool slightly before serving.

Notes

Serve with chimichurri or salsa for extra flavor.
