Description

Soft, naturally sweet Banana Oat Muffins made with ripe bananas, oats, and vanilla. These healthy mini muffins are vegan, flourless, sugar-free, and perfect for breakfast, lunch boxes, toddlers, and quick snacks.

Ingredients

  • 4 large ripe bananas, smashed
  • 3 cups old-fashioned oats or quick oats
  • 1 teaspoon vanilla extract
  • Optional mix-ins: mini chocolate chips, chopped nuts, peanut butter, raisins, shredded coconut, chia seeds, cinnamon, dried cranberries, blueberries, strawberries, or a pinch of sea salt

Instructions

  1. Preheat the oven to 350°F and generously grease a mini muffin pan.
  2. Add the ripe bananas to a large bowl and mash until mostly smooth.
  3. Stir in the oats and vanilla extract until the mixture looks moist, thick, and evenly combined.
  4. Fold in any desired mix-ins, or add mix-ins directly to individual muffin cups for variety.
  5. Spoon the mixture into the prepared mini muffin pan, filling each cup close to the top.
  6. Bake for 15 to 18 minutes, or until the tops look set and the edges turn lightly golden.
  7. Let the muffins cool in the pan for 5 minutes.
  8. Remove the muffins gently and let them cool slightly before serving.
  9. Store leftovers in an airtight container in the refrigerator for up to 5 days.

Notes

  1. Use very ripe bananas with brown spots for the best natural sweetness and moisture.
  2. If the mixture looks too wet, let it rest for 5 to 10 minutes so the oats absorb the banana.
  3. If the mixture looks too dry, mash in a little more banana.
  4. For sweeter muffins, add chocolate chips, raisins, or 1/4 cup maple syrup.
  5. To make several flavors in one batch, fill muffin cups halfway, add mix-ins, top with more batter, and add more mix-ins on top.
  6. Refrigerate leftovers for up to 5 days or freeze for up to 2 months.
