Description
These baked peaches are stuffed with a brown sugar cinnamon pecan streusel and baked until juicy and golden brown. Serve warm with vanilla ice cream.
Ingredients
- 2 large or 3 medium ripe-firm peaches, halved and pitted
- 2 tablespoons all-purpose flour
- 3 tablespoons brown sugar
- 1 tablespoon granulated sugar
- 1/8 teaspoon cinnamon
- 1/8 teaspoon salt
- 2–3 tablespoons chopped pecans
- 1/4 cup oats, quick cooking or regular
- 2 tablespoons chilled butter, cut into small pieces
- Vanilla ice cream, for serving
Instructions
- Preheat oven to 350°F and butter a baking dish large enough to hold the peaches.
- Use a melon baller to scoop out some flesh from the center of each peach half to create a cavity.
- Combine flour, brown sugar, granulated sugar, cinnamon, salt, pecans, and oats in a bowl.
- Add chilled butter and rub it into the mixture until crumbly with pea-sized pieces.
- Divide the streusel filling evenly among the peach halves and pack it into the cavities.
- Place peaches cut side up in the prepared baking dish.
- Bake for 35-45 minutes until the peaches soften and the topping turns golden brown.
- Allow the peaches to cool slightly before serving.
- Serve warm with vanilla ice cream.
