Description
This cheesy baked garlic bread dip is loaded with roasted garlic and creamy cheeses—bringing all the comforting flavors of garlic bread into one shareable dish.
Ingredients
2 whole shallots, bottoms cut off
2 heads garlic, tops cut off
2 tbsp olive oil
1 (8 oz) block softened cream cheese
1 cup sour cream
1 1/2 cups shredded mozzarella cheese, divided
1/2 cup grated parmesan cheese
1/2 cup fresh chopped parsley, reserve some for topping
1/2 tsp salt
1/4 tsp pepper
1/2 tsp red pepper flakes
Instructions
1. Preheat oven to 375°F (190°C).
2. Cut tops off garlic heads and bottoms off shallots. Place on foil, drizzle with olive oil, and sprinkle with salt.
3. Wrap tightly and roast for 1 hour until soft and golden.
4. Squeeze roasted garlic and shallots from skins into a bowl and mash into a smooth paste.
5. Add softened cream cheese, sour cream, 1/2 cup mozzarella, parmesan, parsley, salt, pepper, and red pepper flakes. Mix until combined.
6. Spread into an 8- or 9-inch pie plate and top with remaining mozzarella.
7. Reduce oven temperature to 350°F (175°C). Bake for 20–25 minutes until golden and bubbly.
8. Garnish with chopped parsley and serve warm with toasted bread, bagel chips, or pita chips.
Notes
Make-ahead tip: Assemble the dip a day before, cover, and refrigerate. Bake just before serving.
For extra flavor, add bacon, spinach, or sun-dried tomatoes.
To store, refrigerate leftovers up to 3 days and reheat until warm and creamy.
