Description
This soft and moist Applesauce Cake features classic apple flavor, warm cinnamon, and simple vegan or oil-free options.
Ingredients
1/2 cup applesauce
1/2 cup water
3 tablespoons oil or additional applesauce
2 teaspoons pure vanilla extract
1 tablespoon white vinegar
1 1/2 cups flour, such as white, spelt, or oat
1/3 cup sugar
3/4 teaspoon salt
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon cinnamon
Optional: 1/4 teaspoon allspice
Optional: 1/2 cup raisins, chopped walnuts, or shredded coconut
Instructions
1. Preheat the oven to 350°F.
2. Grease or line an 8-inch baking pan.
3. Whisk the applesauce, water, oil or extra applesauce, vanilla extract, and vinegar until smooth.
4. Add the flour, sugar, salt, baking soda, baking powder, cinnamon, and optional allspice.
5. Stir gently until the batter comes together.
6. Fold in raisins, walnuts, or coconut when using.
7. Spread the batter evenly in the prepared pan.
8. Bake on the center rack for 18 minutes.
9. Check the center with a toothpick.
10. Let the cake cool fully before frosting or slicing.
Notes
For an Oil Free Cake, replace the oil with three additional tablespoons of applesauce.
Use unsweetened applesauce for better control over sweetness.
Do not overmix the batter.
The cake often tastes sweeter and more fragrant the next day.
Store covered at room temperature for two days or refrigerate for about five days.
Freeze individual slices for up to three months.
