Description

Apple Zucchini Bread is a moist quick bread made with fresh apple chunks, grated zucchini, cinnamon, and walnuts. It is perfect for breakfast, snacks, or dessert.


Ingredients

  • 1 cup white sugar
  • 1 cup brown sugar
  • 3 large eggs
  • 1 cup vegetable oil
  • 3 tsp vanilla extract
  • 3 cups all-purpose flour
  • 3 tsp ground cinnamon
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 cups grated zucchini
  • 1 cup apple, diced and peeled
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 325°F and grease two 8 x 4 inch loaf pans.
  2. Grate the zucchini with a box grater and set it aside.
  3. Peel one medium apple, then dice it into small pieces.
  4. In a large bowl, mix flour, salt, baking powder, baking soda, and cinnamon.
  5. In a separate bowl, beat eggs, oil, vanilla extract, white sugar, and brown sugar.
  6. Add the wet ingredients to the dry ingredients and stir until combined.
  7. Add grated zucchini, diced apple, and chopped walnuts, then stir until well combined.
  8. Let the batter rest for 5 minutes.
  9. Pour the batter into the prepared loaf pans.
  10. Bake for 55 to 60 minutes, or until a tester inserted in the center comes out clean.
  11. Cool the bread in the pans on a rack for 20 minutes.
  12. Remove the bread from the pans and cool completely before slicing.

Notes

  1. Store Apple Zucchini Bread in an airtight container at room temperature for up to 5 days.
  2. To freeze, wrap the bread tightly in plastic wrap or aluminum foil and place it in an airtight container or freezer bag.
  3. Freeze for up to 3 months.
  4. Thaw at room temperature or in the refrigerator overnight before serving.
  5. You may replace half of the vegetable oil with applesauce if desired.
